Cultivating Care: Out of respect towards the environment and consumer's health, we make no use of any chemical products (EU2092/91). The organic olive oil Oleastro is certified by LACON. 'Koroneiki', the variety we have in our organic olive grown, is renowned as one of the best types to gain olive oil out of. It is rich in flavor and aroma and light for the stomach to digest. Olives are cultivated with love and care in the serenity of our organic olive grove 'Oleastro'.
Harvesting: Olives are harvested in the artisanal manual way as they begin to ripen. When olives start changing their
colour from green to bluish- purplish, but before they have turned black, is the ideal time to harvest them, as they reach the pick of their
flavour.
Extraction: The olive oil is extracted on the very same day to the HACCP and ISO9001:2000 standards in the ecological (two-phased) method with cold pressing using millstones, ensuring thus the highest possible quality. In this way, organic olive oil Oleastro maintains fully its nutritional elements, its organoleptic properties (taste, aroma,
colour) and its polyphenols for longevity.
Storage and bottling: The organic olive oil Oleastro is stored in stainless steel containers in controlled temperatures (10-18? C). Bottling is also carried out in our own bottling facilities, which are also certified to the HACCP and ISO9001 standards. Organic olive oil Oleastro is
sold in green bottles with a narrow bottleneck that prevent light and air penetration, which spoil the product. Ideally, you should store olive oil in cool, dark, dry places, but not in the refrigerator because it will solidify.
Organic olive oil 'Oleastro' (link) comes in a variety of sizes and fancy presentation packaging plain or with herbs also in combination with other traditional products (e.g. olives, tapenade, carob honey, balsamic vinegar etc.)
Ecological Olive Mill
The mill, aiming at producing olive oil of the highest possible standard, is a 'first' in Cyprus because it is the only one certified to the HACCP and ISO9001 standards.
The process of olive oil making lasts about an hour and a half and is fascinating to watch. After the deleafing, washing, and electronic weighing, olives are crushed both in the crusher and in the millstones (a harmonious combination of state-of-the-art technology and tradition). After that, the crushed olives fall into the kneading units where temperatures do not exceed 25 C for cold pressing.
Next, the centrifugal decanter separates the crushed kernels and the skins from the olive oil without water added to the process. Consequently, cold pressing is secured (added water can even be boiling sometimes!), no water waste is created (this method is also called ecological), which is very damaging to ground water and has, therefore, been banned in various regions with intense olive cultivation. As no water is added, the olive paste in the decanter is not diluted. As a result, the olive oil maintains fully all its nutritional elements, original
flavour, aroma, and colour. Finally, the oil is stored in rooms with controlled temperatures in stainless steel tanks to preserve its quality and longevity.
The 'waste' - the leaves, crushed kernels and skins - are recycled in the form of organic compost to feed the trees instead of chemical fertilizers. Part of this is also dried out and used as fuel for the water boiler as an alternative form of energy, instead of using electricity for example.
